Program Overview
One Table Kitchen – Toronto is Eknoor Foundation’s flagship food security initiative designed to address growing food insecurity across the Greater Toronto Area (GTA).
The program is built around a simple principle:
No one should face hunger in a city of abundance.
Through structured volunteer engagement, food recovery partnerships, and responsible meal preparation, One Table Kitchen aims to increase access to nutritious food for individuals and families experiencing hardship.
The Need
Food insecurity continues to rise across Ontario:
Approximately 1 in 7 households in Ontario experience food insecurity
GTA shelters and food banks report record demand
Significant volumes of surplus produce remain underutilized due to limited processing capacity
These pressures place vulnerable individuals at increased risk of instability and long-term hardship.
Program Model
One Table Kitchen – Toronto is being developed as a scalable community kitchen model focused on:
Establishing a properly equipped commercial kitchen facility
Processing surplus and donated produce into nutritious prepared meals
Coordinating inclusive volunteer shifts
Partnering with food banks, shelters, seniors’ centres, and student support programs
Prioritizing food safety, hygiene, and operational accountability
The program emphasizes dignified service delivery and responsible stewardship of resources.
Food Recovery & Sustainability
A key component of the Toronto model includes:
Rescuing surplus vegetables and produce from farms and grocers
Reducing food waste
Converting rescued food into prepared meals for community distribution
This approach addresses both hunger and environmental sustainability.
Projected First Year Operational Targets
As capacity and funding allow, the Toronto initiative aims to work toward the following first-year goals:
Meals distributed: 350,000 – 400,000
Vegetables rescued & processed: 180+ tonnes
Individuals supported: 10,000+ unique individuals
Volunteer engagement: 15,000+ volunteer hours
These targets represent projected outcomes based on planned operational scale and are dependent on facility development, partnerships, and available funding.
