Program Overview

One Table Kitchen – Vancouver is Eknoor Foundation’s developing food security initiative serving communities across the Lower Mainland.

The program is designed to increase access to nutritious meals for individuals and families facing economic hardship, while promoting dignity, inclusion, and responsible stewardship of resources.

Vancouver represents a strategic expansion of Eknoor Foundation’s food-first model, responding to rising demand for reliable meal support in British Columbia.

The Need

Food insecurity continues to impact communities across British Columbia:

  • Approximately 1 in 5 households in B.C. experience food insecurity

  • Nearly 3 in 10 children live in food-insecure homes

  • Seniors and newcomers are disproportionately affected by rising food costs

  • Homelessness in Metro Vancouver has increased significantly in recent years

  • Food banks and shelters frequently report record demand

These realities highlight the need for expanded community-based food programs that provide fresh, nutritious meals delivered with dignity and respect.

Program Model

One Table Kitchen – Vancouver is being developed as a scalable kitchen model focused on:

  • Establishing a properly equipped commercial kitchen facility

  • Processing surplus and donated produce into prepared meals

  • Coordinating inclusive volunteer service shifts

  • Building partnerships with food banks, shelters, seniors’ centres, and student support programs

  • Ensuring compliance with applicable health, food safety, and operational standards

The Vancouver initiative is structured to grow responsibly, aligning expansion with available funding, facilities, and governance capacity.

Food Recovery & Sustainability

The Vancouver model incorporates:

  • Recovery of surplus produce from farms and grocers

  • Reduction of food waste

  • Conversion of rescued food into prepared meals for distribution

This approach strengthens both food security and environmental sustainability.

Projected First Year Operational Targets

Subject to facility development, funding, and partnerships, the Vancouver initiative aims to work toward the following first-year targets:

  • Meals distributed: 100,000+

  • Vegetables rescued & processed: 100+ tonnes

  • Individuals supported: 5,000+ unique individuals

  • Volunteer engagement: 10,000+ volunteer hours

These figures represent projected goals and are dependent on operational scale and community support.

All Vancouver operations are conducted in accordance with:

  • Provincial public health and food safety regulations

  • Eknoor Foundation’s Financial Accountability Policy

  • Volunteer Code of Conduct and Safeguarding Standards

  • Federal not-for-profit governance requirements
